Server? The main advantage to RHEL is often the first-party commercial support you get. Support is a HUGE factor for many companies. If I want RHELish but without paid support, I go Alma.

Desktop? I don't really use RHEL for desktop, rather Fedora. And as to why, I find it to be significantly more stable, predictable, and compatible out of the box than ubuntu. This is VERY situational though, and you could just as well experience the opposite if your hardware is different. Since I use Alma/RHL for server, this also keeps me pretty close UX wise across all my systems

I've actually been interested in learning more about nixos. I would never use it in production envs, but as a desktop, it's interesting.
