One of the benefits of running a "live" OS is the volatile nature of the system. you only persist the data you want. that's why when it comes to anonymity, etc. people will use something like a Tails OS USB

Hello, how long should an nmap -A -p- scan on all ports take?

I think I may be having issues as it is taking a while

it depends on a number of different factors. like, network latency is a big one. if th response times are significantly delayed, you have to scale that time over 65,535 ports, which could be a minute. also, -A does a lot of stuff. so, not only are you scanning for open ports, etc, but you are checking versions and (i think) running scripts too.

what i like to do is issue the verbose switch -v or -vv for more verbosity, then you can see the progress

that's a long time, but reasonable, depending on the latency. if you want to compare with a different type of scan, and are able to do so, try this one: sudo nmap -sS -p- -v target. you can even do sudo nmap -sS --min-rate 1000 -T4 -p- -v but you may lose packets. basically, just try scanning the ports to check the general latency, then selectively run scripts if you need to
