Having things written in your own hand (metaphorically), and structured in a way which makes sense in your head is invaluable.
You cannot, and will not remember everything you learn in this industry. If you're having to repeatedly research the same concept then you are not doing your job efficiently. As I said, if you're solving the same problem twice, you're doing something wrong.
I have notes on troubleshooting niche issues which have taken me several days and hundreds of Google searches to solve. Imagine if I ran into the same problem a year or two later -- I'm not going to remember every step required there, and repeating that process is a waste of everyone's time (and yes, that's from experience).

TL;DR: taking notes is not a weakness. It's a standard practice for industry professionals, and it's, frankly, idiotic to just dismiss that.

There are a lot of, if not countless studies that refers to how useful it is to make notes or write things down in your own words. It connect the synapses and as Muri sad build reliable connections between the things you learn.

If you want to go in those terms, it's the same as having registers, a cache, memory, and long term storage.

Your brain is your processor. It does the work, and stores the stuff you're using at any given time in registers/cache. Your short term memory is RAM. Your notebook is storage.
It's there to remind you of things you may not entirely remember.
For example, if I see something niche on a test which I've exploited before, I may not remember the exact steps for the attack... but my brain identifies that it's vulnerable because I've seen it before.

My notes are then there to refresh me on the topic. At that point it's just a minute or two of reading at the absolute maximum. I don't need to relearn the topic, I just need to remind myself of the details.
