Remove drive from chassis, plug into a usb adapter, plug usb adapter into intermediate machine, attempt data recovery.

If you are feeling really crazy, and its not seeing any hdd on teh usb bus, You can do some silly things to the drive which will increase the chances of it being recognized. If you used bitlocker, and have the key you should be groovy. If you used any kind of encryption and did not back up your key .. then time to wipe and reinstall

In a real work scenario, how do you investigate an isolated device as it is now of network. Are there EDR tools that makes this easier ?

So I worked desktop support, guy was let go, and we were instructed to send a job to our management software on the computer to get it off any of our networks.

Info Sec called in a guy with CEH cert (yah, in NYC... go figure) we weren't told much on it.

Basically, came in, grabbed the laptop, went where ever.

Assuming you meant off, typically you'll have a have a MDM solution like Microsoft Intune or Jamf that allows you to manage the device. This will phone home even if it's off the corporate network/vpn. If you're using isolated to say it's offline completely, is this a "what if" for if the device falls in to the hands of a bad actor?
