Here are two quickly made setups, the intel one is a little more expensive due to the price of it itself, and needing a cooler on top of it.
The reason behind these choices are that the motherboard can hold 2 m.2 drives if you choose to upgrade with another one, both setups right now have 6tb which should be enough as a start, I chose to go with an extra HDD instead of an SSD, yes it might be slower, but you just use it for storage mostly, and read/write for vms doesn't need to be top notch, BarraCuda is high grade and can hold for years
