sweet chili chicken recipe:

ingredients:
garlic cloves
large white onion
3 bell peppers (orange, red, yellow, all large)
baby corns
chicken breasts
toasted sesame oil
regular frying oil
soy sauce
oyster sauce
sweet chilli sauce
ginger
ketchup

defrost 2 chicken breasts and cut into finger thin slices, if need be slice into chunks
marinate in splash of rice vinegar, splash of soy sauce, a little oyster sauce, and diced ginger and garlic (u dont have to add the ginger and garlic to the marinade but if u can do it, it tastes better. try marinate for 30 mins or more but if u dont have time its ok)

while u wait for ur chicken to marinate, chop ur veggies into large cubes including ur onion - dont worry about the onion falling apart just make sure its big cubes, also dice more garlic and ginger (i just use frozen ginger cubes)

sautee ur chicken until well done in a drop of frying oil, when done set aside

put ur garlic and onion in toasted sesame oil and fry em a little but dont let them go brown, only let the onion get a bit transparent

put in ur veggies and stir fry till the heat is distributed on all ur veggies

add ur chicken now this is the hard part because this sauce is a gamble

add 1 part water, a bunch of ketchup, 1 heaped tbsp oyster sauce, soy sauce, sweet chilli sauce and dunk it in there, it should be enough to cover HALF of your veggies and chicken, then pray to god you put the right rstio (i just keep tasting it till it tastes good. also DONT ADD SALT IF U NEED SALT. ADD SOY SAUCE. SALT WULL RUIN IT)

when ur happy with the taste let it simmer for a while, it should thicken a lil and if it isnt thick enough try adding more ketchup. good luck
