“Why can the enzyme amylase break down glucose but not fructose?” i searched this up and it keeps saying about cellulose but i searched that and it says it’s not the same and AAAAA please help.

simple answer is they have different structures and amylase was not designed to break fructose

they are both simple sugars but they are different structures

if i wanna be pedantic amylase doesn’t break down glucose it breaks down starch which is chains of glucose into smaller bits of glucose called maltose

but yeah it’s really just that it’s active site doenst fit into fructose the way it does for starch

i think not all schools do cus my old school i was learning basic bio in 3rd and up but it was a private school so it really depends

Enzymes are substrate specific

Although fructose and glucose have the same formula, they have different structures

Different structures = enzyme no work bc it’s a picky mf
