“Why can the enzyme amylase break down glucose but not fructose?” i searched this up and it keeps saying about cellulose but i searched that and it says it’s not the same and AAAAA please help.

simple answer is they have different structures and amylase was not designed to break fructose

if i wanna be pedantic amylase doesn’t break down glucose it breaks down starch which is chains of glucose into smaller bits of glucose called maltose

#

but yeah it’s really just that it’s active site doenst fit into fructose the way it does for starch
