If you can, try to look up local farmers in your area. Some of them will literally sell you a cow. What it is, you and a bunch of others (unless you want the whole cow) choose cuts you want. When the cow is butcheres, you pick up the meats you purchased.

You support local and you know what the animal has been fed from start to finish.
I have beem meaning to look into this further, I've only found egg sellers, produce, and chicken sellers in my area currently.
