For a standard model kit, they are nice for removing bits that are too rough for sand paper that the snips can't get. Also can be used to cut pieces off the sprues when the snips can't get in

That's a normal sprue (I may be mispelling it though). After you use the snips to get the piece off, you can use the exacto knife to help remove any big pieces of plastic that sand paper can't get.
You then sand paper it to smooth it nicely
