It came from the Strugatsky Brothers' writing called... Obviously... Roadside Picnic. It means a guy, who often visits the Zone, usually, to earn money by taking the tourists. But there are also Stalkers, who look for the GoldSphere, which can grant one wish.

In the game it means literally any guy/gal, who actively researchs the Zone. So Bandits, Traders, Soldiers and Mercs can't be counted as Stalkers.
