I personally don't have uses for speakers, but if you are convinced that you'll be needing em, go for it.
The headset I had selected has good reviews as well.
I go by what Ghost and Naed says, according to them, most gaming headsets don't provide good audio.
And Pc37x is just a middle point between bad gaming headsets and great audiophile headphones.
Of course they're not full-time audio reviewers, but they're people that you can talk to here about audio :)

and yes, you really should wait for the 3070 if you can
and the list i linked has a PSU that is actually good
the ram has been upgrade
the CPU has been upgrade from 6 to 8 cores
the mainboard has been upgraded to something that helps give you next gen cpu support 100%
But, perhaps most importantly, when are you planning to build?
then come back 2 weeks before you are ready to buy
making a list "now" is as close to useless as it goes
things will have changed WAY too much by then
heck, amd will have both a new series of CPU's on the market and GPU's on the market, by the time you will be building
