Do you already have a good understanding of macro game and your role as mid lane? If not then you could start with lesser mechanical demanding champs, but if you already do then I’d say versatile champs that can be played in more than 1 lane are the best to one trick, Jayce, Akali, Pantheon, Galio, Corki, Yone, Yasuo, Ekko, are good picks I’d say it also depends if you are looking to be a team player or go solo q

As a lulu main when I go mid I just play Brand or Morgana and it goes just fine, ranged champs are easy to play in lanning phase and offer more carry potential when in solo q

The best way to find your main is just playing the game tbh. Picking champs, and seeing if you like them, and if you do, then that might be a champ for you.
As you said, you're tempted to pick Ahri
so just pick her and see if shes actually your favourite champion
