Yes, once a villager moved in via amiibo, they essentially become a regular villager, so when they move out, others are able to come and adopt them.
The exception to this is the Sanrio villagers, they cannot be adopted by other players when they are in boxes

Fruit is every few days, that number being dependent on whether or not it’s your native fruit. Flimsy tools can break rocks, but if you just want to get resources, you don’t need to break the rocks

The ability to break rocks is given by eating fruit

So I have the amiibo cards from amiibo Festival. I wanna invite Goldie but the plot that was reserved for her ended getting taken by Quillson, who I...really don't like.

I know in New Leaf, you could immediately force a villager to be in boxes if you scanned an amiibo card and went through the menus.

Is that still a thing in New Horizons? If so, how does it work? Cause I invited Goldie and she said she is "not ready to make such a decision" and I wonder if that's because my island is full.

You must invite an Amiibo villager and craft them their requested item 3 times in order for them to agree to move in. It doesn't need to be 3 consecutive days, just 3 days total.

• What if I have an open plot?
Amiibos still need to be invited 3 separate times, even if you have an empty plot.

• Can I choose who the Amiibo villager kicks out?
Yes, just make sure you've spoken to that villager at least once and their house isn't currently being relocated.

ignoring them doesn’t work in new horizons to encourage them to move. talking to them actually seems to boost your chances from what i’ve read, so you’ll be safe to give the medicine regardless.

i believe the chances of any villager asking to move out is completely RNG. just make sure you chat with them occasionally and hope for the best.

Yes they will eventually fill automatically (it can vary depending on whether you have villagers in your move in queue or not, which is dependant on if you've visited other islands/had visitors to yours). If you've placed more than 1 down from the ones you buy from Tom Nook, I can't remember how long between them before another one will fill, but I imagine the next one will start to roll to fill as soon as the previous one is sold
