When redesigning island houses, should I not bother trying to put down a kitchen type stove or a crafting table for when the villagers are home making something? As an example I placed a stove thingy in one of their houses but when I came to visit they magically summoned a dif stove on the opposite side of their room.

No as long as you have them in a line that can block the path, they can have a half tile gap, and be in diagonal if you are not exactly in a straight line it's OK. Try to bee not too jagged though and it's better if you go toward the other side like don't put one 3 tiles from the shore and one lining outward (idk if this is a clear explanation...)

The HHP island and your home island are more or less separate entities, to my knowledge it's not even the same "copy" of the villager so I don't think they will have any specific memories of you aside from inviting them to the archipelago from your home island. You can replace them on your home island and have them remain on the archipelago, though.

.t replace // isabelle unfortunately wont give you any options about a villager's home if you don't have the DLC. your best option with just the base game is to try and replace the fish with something nicer looking. see below for house replacement details

• Villagers' gifted clothing can be removed via giving them over 24 wearable clothing items, as 24 is the limit for clothing a villager can hold.
• Accessories: can be replaced by gifting them 24 'non-glasses' accessories (Villagers won't wear these, e.g. bubblegum)
• Caps (not helmets): Caps in the game are tagged either as free or womanly. Male villagers will only use caps tagged as free and gifting them 24 womanly caps will replace other caps from their storage. Since female villagers can use both types of caps, the only way to remove them is when they approach you to sell/gift/trade in the item. So you need to upgrade resident services to a full building, not just a tent you can do that by buying the shop known as nooks cranny, and then tom nook introduces Isabelle to your island once the building is done later go inside the building then sit at the chair tom nook has in front of him it should say construction consultation counter and then pick the option "Let's Talk Infrastructure" and then ask him to sell some land 10,000 Bells for each home up to 10 homes in each island
