You want to make a unique combat system.
In what maner you want it to be unique and why you want it to be unique ?

I'm making an open world game, where i am integrating variety combat 'paths' where you can either choose to fight with guns, use magic, use alchemy, use swords, use Mecha(s) if you want to as well
Also variety of martial art types (both fantastical and realistic)
so I want to know of other such things that i never heard of, like maybe superpower based combat or something
You see, knowing that it is a an open world game, which assume would be played as Humanoid character in an RPG style does restrict the choice.
What are the thematic of your game ?
What are the core tenet of your game ?
you don't need to consider such things for the moment, as i just want to know of such things and see if i can make something similar or feel inspired to make something completely different

Unfortunatly, I cannot help you given that there is so many idea, anything I can think of is as good as the other.
Open world (maybe proceduraly generated) game, that consists of multiple dimensions (inspired from minecraft) has a HUGE number of different monsters. the game will have skateboards, spaceships and everything in the middle. multiple different types of races and civilizations. destroyable and manipulative terrain and you can build houses and also consists of factory aspects.
Lay down whatever comes to mind and any time, doesnt matter if its card games or strategy or whatever

Where the game is a hub for multiple game ?

its all ONE expansive game
the number of monsters are in the triple digits ๐

Given that your game focus on being as diverse as it can on term of theme and feature, I believe that the simplest combat system is the best. Meaning, a simple action combat system similar to what you see in Minecraft would enable you to integrate every type of theme your game offer.

If you want to focus on diversity of content, you need a combat system that enable that.
If you want to focus on having a unique combat system, you are going to give up on diversity of content.
This is what we mean by core tenet of a game.
They are the directive line. In your case, it would be to be as inclusive as possible.
You can see something like Fornite to be your end goal.
