All the more reason to do so then, as long as you keep your scope small. We have senior programmers who use photon as well as Unity Multiplayer tools (using the latter most recently) But Photon is a great start. Doing that will help set you apart in a field of mostly beginner throw away games.
I understand... also shall I aim for a bigger project to get a job or do small projects in which every project shows different genres and my skills?

Generally speaking a single (small) project that demonstrates a variety of techniques and consolidates stuff is ideal. You don't need six different projects to present the basics of audio, animation, UI, gameplay, some backend systems, multiplayer etc. One multipler game with ads and sfx covers all the necessary grounds. The more a single game is refined the better of an impression you'll leave. It's also less work for an interviewer to go through one well made game then having to play six different trashy ones 😛
And there's always the chance they'll never even peek at your portfolio, try to make the visuals catchy, and the introduction snappy (straight to action, as fast as possible)
