I'll probably make a differences compilation since the Switch build will be updated somewhere around next week
Mayor's house still uses the jukebox from the Beta
Gerda's pastries are all gone 
Quentin's corkboard is not present
the clock is removed and instead the gear mechanism is in the museum bedroom
Quentin's surveillance cameras only show the Neighbor's house throughout the entire game
the neighbor makes cursed animations when he sits down in his armchair near the fireplace
you can turn on Gerda's stove (you can also use it to thaw out the iced key not only the fire oven)
I think it's an edited beta model, because it's not exactly the same
I would've thought this would be in the other versions
his proportions look off

he did make some face similar to that in the demo build
when he walked outside his house
I never knew that was there
presumably a guest statue? (underneath the statue of the attic speaking of the attic it doesn't have the forest protector statue but it has a mask piled on top of a clothed object which is probably one of the most strangest differences)
Gerda's clock puzzle is missing
the car hood puzzle for the crow statue is in the museum bedroom instead of the globe room with the clock code
I don't know if I would consider this a difference but the eshop for the Nintendo Switch has this exclusive image correct me if other stores for other versions have this
On the Xbox version, it has an exclusive image of Mr Otto peaking to you in the place where you can croutch to hide, the same place where Mr Otto can't get you inside, and the purple skybox with lightning too
