Winging it works for some but if you know what you're gonna say etc as you practiced it helps. Also gives you an idea of if you are going to fast, to slow, etc.
Don't worry about your stop / pause words either. Everyone does them and only the more advanced speakers try to be more aware of it and work around saying them
