you can take breaks. The 3 hour means that the total best time of all the missions has to add up to less than 3 hours. If you complete every missions par time on ledgendary, you will get the achievment. because the par time of all the missions adds up to just under 3 hours

so you can do 1 missions, take a break. do the next mission, take a break. and so on
