also how much water do you need to cook rice, just enough until you cant see the rice?
sometimes my rice gets too hard or too mushy. Hard I sometimes tolerate but mushy is just eww
Normally you use a 2:1 ratio of water & rice. If you are making a cup of rice, use 2 cups of water.
And you have to cook it just perfect. Best investment I made in the kitchen is a rice cooker. Add the rice & water, flip the switch to 'Cook' & walk away. Once the rice is properly cooked, it will flip to 'Warm' & keep the rice warm until I serve it.
And a rice cooker will cook other things than just rice. I use mine to also make oatmeal for breakfast & the more expensive digital rice cookers can make a wide variety of foods besides rice.
Dinner tonight is lasagna & garlic bread sticks. 28 more minutes on the lasagna & I'll take it out of the oven & pop the bread sticks in.

No. Rice needs lots of water to cook in or it will cook dry & that's not good. Rice wil lbe hard & you might as well you pour the rice out of the bag & eat it then.

A little trivia for y'all. The numbers on a toaster does not indicate what degree of toasted the bread is, it means how many minutes the bread toasts. So if you set it on 5 thinking you will get a nice even brown toast.... nope. It means it will cook for 5 minutes & look like those above in Pake's photo....

Regular white rice like you buy in Kroger's, Food Lion, Walmart, etc-- use a 2:1 ratio since the rice is going to absorb the water as it cooks. Use less than a 2:1 ratio the rice will cook dry & burn

2 things I found reading that I am still doing wrong. I'm not washing the uncooked rice to get any excess starch off & I'm not salting the water. I salt the water for potatoes & pasta to remove starch, but not for rice....... Going to have to retrain myself to start doing those things. Plus I only use a rice cooker to cook rice in. Otherwise I will cook the rice in a pot on the stove & then go to the trash can & dump it all in there once it's cooked & burnt or otherwise inedible.

Bok choy is great in homemade Kimchi too.
It's called Mala in chinese buy it is from Prickly Ashe Pepper corn aka Sichuan Peppercorn. Makes your mouth and tongue tingle and has a citrus type taste. Most unique flavor I've ever tasted and unless you have authentic Sichuan chinese restaurant available most people won't ever experience it. Or if they do it freaks them out as they aren't familiar or fully expect what the spice is going to do.

Yes, I’d rather not risk food poisoning again.
Too dangerous, just toss it. Mold spores can go deep into food, even a brick of cheese & even though you may cut off the furry green stuff, it could have tendrils still deeper into the brick of cheese that can make you sick. Bread is even worse since it is porous-- mold can go throughout a loaf or bread.

Yup yup, that "Or-lins" pronunciation is pretty much the Normal pronunciation with our Southern accent. And yeah, we don't say "N'awlins" unless you're a southern country bumpkin and/OR exaggerating/joking.
I've made fried shrimp with Old Bay seasoning-- but it isn't the same thing as real Cajun shrimp.

Couple different ways I make crawfish
The first one is a spicy udon noodle soup. The second is a Chinese hot pot style and the last south Texas boil with 3 different potatoes, corn, sausage, onions, garlic and corn on the cob

Cook like I do from the time I was in a 400 square foot bungalow with a two burner stove to a decent size kitchen now. I do have a lot of different pots and pans and cooking gear but the size of the kitchen hasn't really determined what I cook. What usually keeps me from cooking something is inability to obtain ingredients.

And that is perfectly fine to me because I don't enjoy only one style of food and demand it is the only good way to eat. Eating adventurously has let me see so many different cultures and taste very exotic delicious foods. I love LA Style crawfish but it's not the end all and certainly not the only delicious way to eat crawfish 🤗
The first dish is a Filipino style noddle dish
However the second is literally a LA Style boil with sausage and instead of pre package spices I used whole spices of the same things that are ground up and put into the bags people use to season their crawfish boil I just prefer different levels of some spices more than others so I mix them myself.
Most of my friends from LA don't eat it as spicy as I prefer 😉
Chinese have a crawfish dish that blew my mind so much flavor and so different I can't wait to try it. As it is almost crawfish season here for me I'm excited to start cooking them 😃👍

Covered in either a garlic sauce or a spicy herb sauce fills these mud bugs with so much flavor and so different than the "typical"
We made a couple different noodle dishes today
First one is dry noodles with a spicy fish sauce and the last one is with a savory chicken broth
Mind you you wont find those dishes made anywhere outside my house as they are my own creations thus pictures I took of food I cooked 🙂
Ok.... I sometimes use box meals when I don't feel like thinking of what to make or don't feel like putting any effort into the meal that night. So tonight I made one of those Velvetta Skillet meals in Philly Cheesesteak flavor. Box said I only needed to add 1 pound of ground beef & 2 cups of water-- the rest was in the box. Cooked & drained the meat, then it said to add the water, noodles, green pepper & flavor packet. No green peppers to be found.... Either the box has a misprint & I was supposed to provide the diced/minced green pepper or they forgot to add it to the meal kit & QA didn't catch it when that box was going down the assembly line as fast as these cop cars go in this game....

Catfish is good, you just have to make sure you get all the bones out of it before cooking. Salmon & tuna are good fish-- stay away from tilapia though.... And you do need to read the label on some tuna too so you aren't eating a mercury thermometer.....
Multiple ways to make a pizza.... Depends on how you want to make it & what type of crust you want. In fact I just learned of a new way that involved a cast iron skillet. You put the dough in the skillet & cook/bake it on the stove, add sauce, cheese & toppings then transfer it to the oven on Broil so melt the cheese & cook the top of the dough.... Need to find the exact directions before I make it so I know correct cook times.

You lost me at tofu.... Never liked it-- although I bet if it was slipped into a meal, seasoned/flavored to hide the fact it is tofu & not told there is tofu in the meal, I probably would eat it. But if I know there is tofu in a meal, I'll pass........ I'm weird.... get used to it.
I can relate to that. What I've learned is most people I know who don't like Tofu haven't had it prepared properly, I was one of those who only had it "western" prepared by Americans who had no idea what to do with it and that type of tofu is disgusting!!! When its authentically prepared it "can" be amazing not %100 but everything I've tried has been. The one from last night was breaded and shallow fried until crispy and then glazed in a spicy sweet sauce kinda of like a spicy Teriyaki sauce. The Tofu comes out crispy out side and smooth like soft baked potato inside and doesn't have that distinct Tofu flavor most of us hate from all major non asian super markets >_<

Catholics do not think fish is not meat. Back in Roman times the poor could only afford fish-- beef, pork and any other 'meat of the beast' was considered specialty food for the rich. So lent fasting only allows Catholics to eat foods that was readily available to the poor back in that time-- fish & vegetables. So no hamburgers, steaks, pork chops, filet mignon, T-bones, etc, but a Catholic observing Lent can eat all the fish they want for that week.

As someone who grew up in a Catholic family, I vividly recall most of my family members refer to fish as a non-meat, thus we were permitted to eat that (and/or any other seafood) on Good Friday while we 'semi-fasted' on Ash Wednesday (had restricted intake). Despite them constantly bolstering that fish wasn't meat, I still internally didn't agree with that opinion.
This was when I was in my early youth BTW.
My BFF is Catholic and I would torment her all that week. We worked together at that time & we only had 2 fast food places near our office to eat lunch at-- a hot dog place & a Subway. She would get a tuna sandwich or a salad for lunch & I would get a sub with extra steak on it....... She paraphrased what I posted when I asked her why fish was allowed then (my post is the 'official' reason by the Catholic church as to how fish is allowed, and over time people just started referring fish as a non-meat)

That's quite interesting, but even if I lived in that time, I'd be very content with a fish and veggies diet because I LOVE absolutely seafood! I wonder what they thought of sharks back in those times....surely shark meat is also beastly. xD
I've always pictured fishing back in that time period as being freshwater fish-- like trout & bass. Never thought they might do any salt water fishing for squid, octopus or shark.
I remembered sth I learned from watching marvellous Mrs maisel - on some occasions for Jews (only) fish is allowed, but not every fish is fish :
Eg pangasius and eel don't count as fish cuz to little scales, so almost like skin or sth (I think that was the reason)

It's amazing!
I had a jar I bought in the store & 6-8 months in the back of the fridge forgotten about & it wasn't spoiled. The fermentation process allows Kimchi to last a long time & still be edible if properly stored.

Most of that brand I buy are the pies. They make a great apple & pumpkin pie. Just take it out of the freezer & pop in the oven. An hour later, nice hot pie. then grab the ice cream to add to the apple or Cool Whip to put on the pumpkin.

the virus is airborne and can stay in the air and on most surfaces for over 3 hours and because people who don't display symptoms can be carrying and spreading the virus its incredibly risky to eat from any restaurant take out or the like especially if they allow people to eat inside. If the person in front of you in the drive thru has the virus rolls down their window to pay for their food it can transfer to you when you pull up to do the same thing...
The virus is spreading fast because most people aren't taking it serious enough or understanding what "Airborne" means and how long it stays in the air and how far that "air" can take the virus.
@glossy carbon Here is West Virginia, takeout service & drive thru service has been available since the stay home & closure orders were first issued back in February- March 2020. We have seen nothing to indicate that is a threat to safety. Especially when you pay at one window & pick up your food at another & all restaurant employees are wearing masks plus some even wear face guards over their masks & all food handlers are required by law to wear gloves when handling food anyways, so all food is touched by clean gloves at all times. Even in Arizona where there has been a spike in new COVID cases, there is no discernible difference in transmission via takeout/drive thru. Even in the sit in restaurants, with the protocols currently in place in both states, it is no more unsafe to eat in a sit down restaurant than it was prior to the SARS pandemic.
This belief "it is no more unsafe to eat in a sit down restaurant than it was prior to the SARS pandemic." is why the pandemic is still a fast growing problem.
Take out and drive thru has all still available here too but doesn't mean its safe
I've seen too many employees use their mask as a chin guard for moments in time before someone reminds them to put it back on. On paper yes if everyone was strict and strictly followed the rules to safe virus protection it will reduce the risk but waaaay to many people aren't strict, don't care and if you're in any building with anyone who is infected (symptoms or not) and if they take their mask off to eat... Its a little naive to think them breathing, eating, talking without a mask isn't spreading the virus through the area around them, into the kitchen onto the bags, wrappers, gloves and clothing of the staff walking around. Its just unreasonable to disregard understanding of how this virus is spread. So for my family who have lost loved ones to this virus we'll choose to not eat out because its absolutely not as safe as it was prior to the pandemic and its just getting worse with new variants emerging.
