You're already doing well, I would say the biggest thing to work on is firing nitro for longer (on the ground, single/yellow nitro; and in the air, orange or shockwave) as you're losing out on extra speed by saving your nitro for too long.

Other than that, everything else that can be improved is just to do with practice, like knowing when to drift.

You can't just directly force yourself to immediately stop using TouchDrive - I haven't used it before, but you have to slowly train your skills if you're already used to TouchDrive, and while you're still in that Manual training phase, you'll need to continue using TouchDrive because you're already quite advanced in TouchDrive; it can get rather tricky at first too, but you'll need to be patient; physics can be... a nightmare sometimes
