I had the same problem…..while in game, go to options and then User Center and link your PSN to a dummy Hoyo account and then unlink it on the that dummy account and then restart ZZZ and it should ask you to login in a Mihoyo account.

It had auto signed in because my PSN was linked to Genshin back in 2020, so glad it worked bc ZZZ on PS5 is nice.
