I did it. I finally nailed down making a really nice medium rare sous vide steak.

It's sous vide, so go with lean cuts and pan sear the outside with butter for flavor. Works really well without needing a ton of fat.

Just basic salt(Himalayan pink salt +25% MSG in my case) and pepper seasoning before it goes in the bag for sous vide, pat dry when done, fridge for 10 mins to prevent the searing overcooking it, heat the shit out of your cast iron skillet, then 20 seconds per side (40 seconds fat cap if you use one, but again, not necessary and, honestly, comes out worse, when using sous vide.) in a bit of high quality butter (I use either danish cream butter or home-made butter). This is the final process I've come to after trying a bunch of different things, and it's great while still being pretty damn lean.

Can also use a sous v gun/searzall/propane torch if you really want the skin/fat to be burnt to a crisp, which is nice, but I get better flavor with the pan sear.

This was with choice new york strip, now that I've got the cooking method down pat, gonna try it with cheaper cuts and see how it is. I ended up having to trim the fat cap/bone and make a bone broth stock for the dogs cause just can't get a good crisp on that much fat with sous vide, and sous vide doesn't need the fat. I have learned that, beyond my even being bad at FPS, valo is like the worst of all worlds of FPS for my preferences. I used to play like...halo and CoD. I liked high mobility shooters, and shooters where even if you didn't see your enemy at first (snipers aside) you could still soak some shots and turn to engage/outplay. Valorant is anti-mobility combat, no health, and if you get caught off guard you have 0 chance of survival.
