For one, I'm pretty sure something is wrong with the average RPG because I can't believe grinding is (objectively) considered an inherent part of the genre. It's a stain on gameplay mechanics is what it is.
i don’t think grinding to that extent is a characteristic in rpgs. open world rpgs might feature more grinding, and some open worlds require more grinding than others. but yeah, grinding is a pain and takes you out of the game experience
As someone who has the same issue with RPGs, the ones I've been trying in order to expand into the genre a bit really avoid that issue
DQ11 and FF9, specifically, but I remember Chrono Cross also having a leveling system that wasn't friendly to grinding

On average, I don't think so. I have a very specific beef with FFXIII for having a difficulty progression 'with all the curves in the right places', as bad fanfic prose would have it, right until the end boss... and then between that and the rich endgame optional bosses bonanza there was like a ten-levels gap.
DQ11 worked great because even when you had to grind, it wasn’t much, and there was both auto-battle and increased combat speed options.

The way I see it, a RPGs allow players to self-adjust difficulty a bit - the average playthrough should be feasible by doing all areas with no additional grinding, and if one's feeling confident one may skip a fair deal of battles in each area and truck on somewhat underleveled, and if one's not very good one may overlevel a bit with a little grinding and find their own sweet spot with difficulty. As long as combat's fun.

The only games I can think of that fit that description are the Paper Mario series and the Mario & Luigi series.
So yeah, but then I see certain trends toward either bad difficulty calibration or subquests that are just grinding ('kill x mobs'), or idk customizable weapons that require materials that have low drop rates, and for the life of me I cannot see the value in that approach to design. I don't see fun interaction, I don't see meaningful choices, just being subject to drop rates.
Especially the Mario & Luigi series, what with its unique mechanic of having all attack be dodgeable or counterable.
(by meaningful choices I mean battle-wise, like choosing a certain equipment or certain specs)
Those are all great from this point of view (and also all-around great, love 'em), there's also Chrono Cross as mentioned earlier with its limited exp per area... I'd say a lot of classics are well-balanced, though? I recently went through FFVI again and ime the only major difficulty bump is well-supported by having several story-heavy quests available at that point, naturally bringing you up to the level you needed to progress the main story.
Whenever I played Pokémon, I just used only my starter Pokémon because I didn’t want to have to grind an entire team. Even when I did try to raise a party evenly, I gave up part way through and went back to using only my starter.
I think doing a Nuzlocke run can help with utilizing more Pokemons

Maybe use some exp mods or pkhex if you dont want to grind too much.
What if there was an option to make levels only affect evolution and learning moves, and by default, every pokémon’s stats are that of a level 100?
Nah that’d have problems of its own.
Although, considering most casual games nowadays have a “instant win super easy mode” for people who only want to see the game to completion(like Hades’ God Mode), I’m surprised Pokémon never picked up on the trend.
The simply truth is that non competitive Pokemon is quite light on the tactical layer.
I mean if your starter is level 50 vs level 40, doesn't matter type matchup you will smoke them.
What if there was a special hold item that maxes a Pokémon’s level while held?(Considering multiplayer evens everyone’s levels out, this item would be pointless there)
This is literally why my strategy as a kid was “use only my starter for everything and overpower everyone”
Well pokemon gets stronger also by EV, basically who you defeat along the way.
Levels 100 pokemons aren't equal.

That's why I think Pokemon would greatly benefit for having more difficult encounters.

Usually you can finish the game just by doing the fights that are on the way to any objective
But what if I want to play the classics?
Sometimes they want you to do some sidequests as well, but its not mandatory

Sakuna, the gameplay doesn't reel me in. 4 hours into the game, fought a miniboss and wrecked. I get that it's my fault but the combat is clunky
For me it was dishonored 2, I was having a ton of difficulty with the game, especially the stealth aspect. On after a mission with about 10 deaths or so I just didn't come back to it although the gamplay was kinda fun

Cuphead - was fun to watch others play it, but too hard for my mediocre skills so I haven’t touched it since that first day

Due to way how I play high chaos in dishonored it feels way too mindless to actually try it for me at least, so I stick to stealth since I think it's Dishonored's one of the stand out thing for it, apart from interesting setting and just nice looking animations/places. But like in standalone dlc there was no real need to attempt to improve my stealth so like it was just very awkwardly taking out enemies and then continuing on.
also can agree on terraria, I honestly can't really get into that due to how slow it is or how it needs knowing a lot of things from the get go. Can't really say the same for Stardew Valley, I feel like it needs less usage of wiki, maybe for some endgame stuff, otherwise it's nice to just do chill stuff and figure out the stuff there since there is no real drawback for that.

Oh yeah my problem with stardew valley is different. I find too slow/relaxing and I realized Im not into games that are designed that way
And the lack of short term objectives
There are a lot of goals in the game but most of them are in the long term planning

You can spend all day in the town talking or farming - or you can go out & fight monsters & do dungeons
Stardew was a letdown in comparison

same problem with terraria with only difference is that i like the game, and the slow-paced games in general
i start with enthusiasm, get to some advanced items, maybe clear some dungeon, and then at some point pre-hardmode i realise that i have to sort a ton of junk in tens of chests
and build an apartment for each existing and not yet existing NPC
then i begin to study wiki, to plan a future museum of All The Things In The Game ™️
then at some point i delay the studying for a day, three days, a week, a month, a couple of years till the next update

Yeah. I prefer games that are a bit fast paced, not necessarily FPS fast, but faster than Sunless Sea for sure.

Yeah, coming from KBM, this is a difficulty curve for me
you can adjust the sensitivity to match it more closely to your phone
And I’m not even that good with KBM 
kbm is definitely superior but that's because you can't perform quick turns using a controller
the switch's gyro also just plain sucks. the up and down axis is more sensitive than the left to right axis

The horizontal gyro works like a steering wheel, if that makes any sense
borderland switch has terrible gyro
but Paladins has a pretty good gyro control
imagine saying a good thing about paladins :p

on pc it's not as they say, although there's a bit of bug lottery going on. so I'd say you wait

if you only play main quests (which in cdpr fashion is a big no) yeah the game is short, but (again as per cdpr fashion) they put a lot of work into side quests

i will say its more fun once you sort of know what youre doing because larian studios does not care about your feelings
they will drop you into combat with no knowledge or skills and just let you figure it out

where you fill an unbreakable chest with every heavy item and drop it on enemies to one shot them
