All I can say is, PS players couldn't even get past the main menu on this last update (it's been patched now), if Gearbox suddenly stopped development altogether and left the game in this sorry state, I would have contacted Sony about this game being left in an unplayable state on the last update
If not to press for an update, at least to see if there's a way to downgrade the game's version to a fully playable one

you can start with ER, the pc port is fine. Dark Souls (All 3 of them) is a great game and you probably should play them at some point, if youre interested. ER is pretty much the culmination of FromSoft's work, it's like the "evolution" of their Souls-likes, lots of new stuff, but lots of familiar element of the souls like too

DS is a much shorter game than ER, combat is more methodical than modern souls, so if going backwards with some of the QoL changes they made (like from ER which is more "modern" then playing old school Dark Souls) can put you off, prob start with DS to get the "feel" first.

In Dark Souls 1, just about every mob has a very clear "wind-up then accelerate into attack" pattern. If you can notice this, you can dodge or parry pretty much anything
