Rule of thumb is that cast aspects (poseidon, hera, 4th shield) get a lot of value from 1 blood. Multistrke aspects (chaos, chiron) need a lot of bloods to be good

Yes. In order to beat the Minotaur, you really need to learn how to dodge properly. You can basically dodge through him to avoid most of his attacks, with a bit of timing

His big swings can hit behind him at an angle, though, so if you do make sure you're a bit further away or riiiight behind him

Learning to keep track of Theseus' position and timing is probably the biggest thing that will lead to winning the fight. Bear in mind that 1) he has a visual and audio cue for the spear throw 2) The pillars block the spear, so try to keep one in between you, but failing that remember 3) You can dash through pillars and your enemies cannot

Hey, quick question about Hermes boon "Express Delivery" (I'm playing in french)
It is epic, so I have a 100% dmg boost per 1% speed boost
I currently have roughly 20% speed thanks to the feather
Am I really having 2'000% dmg boost or do i suck at math ?

No, it means that 100% of your speed is translated as damage

So if you have +20% speed you get 100% of that, 20% damage

Other rarities of that boon give you less percentage, so 20% speed, at 50% Express Delivery, would be +10% damage

Does that make sense?

I got my first escape the other day with the sword but I have some confusion on when to use specials for each of the weapons. For most of the weapons it feels like the specials are much weaker than just normally attacking, especially in the case of the bow, how do I go about using them in an effective way?

well nobody forces you to use special, you can train on skelly on how to optimize your special game (since special is very strong with rail, bow, fists and some spear/shield aspects make the special insanely strong :)
