By giving someone important first portion of nectar, you get their keepsake and start a "relationship" with them. As you progress, they will unravel more and more about themselves, give you some quests, until you go to the second threshold, which either gives you a companion, or some story revelation
Either way you'll need to complete multiple runs to achive something worthwile

I've gotten to the big man 2 or 3 time now with the spear twice and bow once but it feels like my weapon choice doesn't really affect my performance other than ranged weapons keeping me alive longer. Are there any typical boons or gods that are considered stronger vs bosses. Theseus is very rough with melee weapons for me.

Like my last run I got demeter/dionysus cast duo ability which totally trainwrecked mobs in seconds. That combo seemed like it didn't matter what weapon I was holding

The first four gods you meet and take a boon from in a run (excluding Hermes and Chaos) will become your god pool for that run, which means you can force one of those slots to be filled by using a keepsake to make that god the first one you encounter. I believe you can force more than 4 gods using keepsakes and rng as well.

What happens is if you change keepsakes mid-run, you can force a god outside your current pool, but it will bump another god out of the pool in turn

Keeping the god pool narrow is usually a good idea though, you want higher tier boons and duos, not everyone's low tier ones

Sniper Shot is a weird Daedalus, tho. It seems like it only triggers at the very end of the bow's range

the only way to have "longer" dashes is to not spam when you have multiple, lots of people do that and it wastes a ton of dash length
