dialogue is not immediately reactive. all unique dialogue has different conditions for what makes them appear, the game only checks that you've met the requirements for a piece of dialogue, and enters that into a pool of available dialogue that may come up when you speak with someone. just keep playing the game and exhaust your dialogue options and they should pop up eventually

I swear to god the game just does not want me to complete the Hypnos autograph quest line. It's basically the last bit of significant dialogue left for me to get in the game, but I've been so unlucky with it lmao. First its frustrating getting all the way to the final boss of Elysium only to throw the run, but half the time i'd get back and Hypnos wouldn't even be at the House. I finally triggered what I think is his final dialogue about asking for it, but now I've done three runs since and not once have I ran into Asterius as the mid-boss. Butterfly Ball every time.

Hermes: ||Max out lambent plume (his keepsake) and equip it on a run and eventually he'll mention it||
With Dusa I think you just need to keep talking to her (since you have maxed hearts) and eventually she'll give you the forged bond conversation ||and in turn you'd unlock Aphro's heart dialogue||

For his favour you're not really "doing" much rather than witnessing dialogue. You'll know you're on the right track if ||Thanatos is speaking to/about Hypnos||. Than tends to create a backlog and thus Hypnos' favour can sometimes get pushed back
