Orpheus' singing can be turned off by playing something at the music stand (then turn it off if you just want ambience). He will not sing again until you come back from a run (or sometimes pass an autosave load zone).
If Hades doesn't have a special dialogue for you, nor is talking to someone else, he'll automatically go between doing his own work and judging shades. If he does have dialogue, he'll start the judging cycle if you pass through a loading zone
