You dont need two successive dashes to avoid being hit, so you can delay it a bit to get to the pillar then dash through it or dash back. Or instead you could make him hit Theseus or a wall but it might be harder

I tended to buy stuff in Styx, and by the time I completed all bounties on all weapons and bought everything from House Contractor, I ended up with like 30 extra Diamonds and 50 extra Titan Blood (and similar excess of Ambrosia), so there's some margin of excess
I think just fishing gives you enough extra. Alternatively, you could not do all the bounties

For hermes you need to have plume equipped while talking to him btw
And pos needs a certain amount of fish caught + having one in your inventory but you probably have that already
