A few years ago I ran a fansite for a Microsoft IP, and MS gave us their blessing to make merch to sell of that IP. People were begging us for plushies of the characters, but every option we found had a huge up front cost. So I get why digital stuff is so much more alluring, way less of a risk, and less of an up front investment.

I remember bugging YoYoGames’ twitter account if GameMaker would export to Switch, and they didn’t answer. Lo and behold, they announced that GMS2 was going to provide Switch tools.
Same thing with the Supergiant twitter account. I was wondering if they were going to release on Switch and they didn’t answer. Cue yesterday, Bastion and Transistor are coming out on Switch.
The lesson? Unless the developer explicitly says “We’re not coming out on Switch”, they’re probably coming out on Switch.

idk if this is the definite answer but i bet the gameplay will be based more on the console/pc versions since the switch has a controller, though it'd be cool to see it have the option for the mobile controls too since the switch has a touch screen! i think scope-wise it's more likely they chose to pick one control scheme over the other since they had to port over from their custom tech, which complicates things a bit
this is just my guess though
could be a good question to ask tomorrow!
