yotsuba is always a great choice
the mob psycho 100 manga while poorly drawn and has action is really great as a slice of life to me at least
read some of the senko-san manga, was good
if you want some slice of life anime
konohana kitan, fox girl slice of life Glowow
nagatoro is getting an anime adaptation soon, it is echii but the manga was good so hopefully anime is
while space dandy is also echii and has a lot of action, I consider it one of the more funny shows, and certainly has slice of life aspects
ones you probably have seen but if you havent
the devil is part timer (season 2 confirmed!)

cause in re:zero the whole point is you watch the MC build up his relationships with the other characters, then in the last few eps of the arc you feel satisfied at everything coming together

think konosuba is my one exception to that rule, they do remind you its an isekai but everyone in the character cast meshes so well together it doesn't feel that way most of the time
