In general, the argument is that the way something is subbed or dubbed can change the meaning of presented media

Dubs, particularly in live action, are limited by sentence structure and mouth movements. Animation can sort of get away with mouth movements being incorrect ofc

Subs are limited in terms of length of the sentence being spoken - since you can only display so much text on the screen
It also depends on the speed of the person speaking, since then it becomes a speed reading contest

For anime in specific, the sub vs dub argument usually stems from the difference in voice acting styles between Japanese and English
