the workable wood is the tier 2 wood, similar to iron for coal. you'll need to unlock the relevant tech in research to get it. from what i've seen so far manually harvesting only gives tier 1 stuff, so after you research it you'd need to use the npc slot to get it.

Yes for that quest and wood you need to do the research and then send out a character/manjuu at the woodcutter lady for 10 of it, you cant manually chop it anywhere

If you match resource for resource, you end up using more resources to make a Wyvern than you do a Spearfish. So, on paper the Wyvern is more expensive, however what makes the Wyvern easier to craft is less resource scarcity, and shortcuts
