No, they don't help. They're worth it only for the features, not for latency.

Polling rate beyond 1k is useless unless you're an esports player

Polling rate is different from sensitivity, it's how many times in a second your mouse is sending data to computer.

You will see difference between 125 to 1000 hz, but beyond that it's less worth it.
