So I've had my little guy for maybe 2 weeks now, he's been eating good from tongs, going to the bathroom, haven't seen him shed yet but regardless, as of roughly 2 days ago he doesn't want to eat from the tongs anymore, but sometimes he'll go for it if it's put in front of him and sometimes he won't. Is this something I should be a little concerned about?

As long as he’s still eating whether it be from the tongs or not, he should be fine nqa
Try drop feeding or bowl feeding him. And try to wiggle the food in front of him so he sees it well enough b/c they can be fairly stupid sometimes 
Sounds good, i know it's not QA but could it possibly be due to brumation?
How old is he?
Not brumation then. He's far too young
I do have a bowl of mealworms in there but I don't think he ever bothers with it
My 9 month old doesn't even go into brumation. They usually start going into a yearly brumation once they reach sexual maturity iirc. nqa tho so take my advice with a grain of salt
well, in my experience, your leo might not even know there is a bowl of mealworms even there. you might have to show him the bowl so he sees the worms in it. my girl didn't realise there was worms in her food bowl for days so

Just make sure he knows there is food, because if the food is unmoving in the tongs, he might think its dead and turn his nose up to it or it might not even see it in the first place
Possibly, usually the ones I grab start doing 360's in the tongs and he still doesn't go for them
For correction
They do not always go into brumation
It is not a guaranteed thing.
Not every gecko will react to winter in the way of going into brumation.

As of right now just small crickets and mealworms, here soon I'll try dubia roaches
You can try gutting and scenting the feeders in canned silkworm juices to see if that sparks his interest again. He might just be getting bored of the feeders.
When you tong feed do you keep the tongs in one place or do you try to make him follow them
Anddd what does your bowl look like that you use for mealies
Usually I'll try to keep it in 1 place and not move the tongs, and a few occasions I tried drawing him to the food bowl so he'll know where they are and give me one second I can send a picture of the bowl

just as a heads up you'll want to not use newspaper that has print on it! that can leech dye.
would be safer to use paper towels
i would try putting the food bowl in a spot that's next to a hide he's always in rather than shoved under that decor.
also make sure you're dusting the feeders
