In case i'm going away on a trip this summer, for let's say a week or so, should I feed my leo in preparation? I intend to purchase a timer to automate my UV and Light cycle in the tank, so that won't be a problem, i'm just wondering about feeding. I don't have my Leo let, he's being held at a local pet store, but my family has been talking about going on a trip for a while now.

Nqa, yes and you'll need a timer for the heat as well. Digital hygrometer and thermostat should still be hooked up and I'd try to set up a camera looking into the enclosure and at the digital thermostats just to make sure.
Make sure they have access to water too, you can get reptile fountains or one of those self water things.
So does the heat timer basically just turn off the heat if it gets too hot?
The heat thermostat should be in control of that, the heat source should be plugged into a timer which is plugged in a heat thermostat with a heat dial for temp. This makes sure that the uvb and heat are on 12 hours, off 12 hours

Would it also be ok to leave a few crickets in the enclosure so he can hunt if he gets hungry?
1 or 2 maybe in an escape proof bowl but some bugs can nibble on your gecko
