I was going to get a 75 watt halogen light but am curious how dimmable they are in case I needed to turn it down if it was too hot. The thermostat I have (pictured) is this brand I think but an older model. Same features and everything. The arcadia halogen light does say dimmable but I was curious about how effective it is.

75W is very commonly used and dimmed. If you have this thermostat already, I would recommend getting a Dimming Dome from Fluker's! That will allow you to dim the light, as this thermostat is an on-off model and cannot dim by itself
If you have more of a budget, you can get a dimming thermostat like the one Zay linked above. That way you wouldn't need a dimming dome, the thermostat will dim the bulb itself
The thermostat above confused me a bit I don't really understand how it works. It doesnt look like jt reads a temperature, or I just missed that.
