I have enough materials to build up 2 more heroes "fully" (expect poe coins). What are some good versatile options? Is Anasta/Oden smart or are they on their way out because of power creep?

I wouldnt advise worrying too much about CR. Meaningful rewards from there are so far out of reach for new players its kinda ridiculous.
If you are a newish player you might have a chance to hit t100 in TS which is way better rewards.
But yes in general Anasta and Oden are good choices to build because they are used nearly everywhere
