That was just the brake pads sticking to the rotors. The caliper may release pressure but somety that doesn't unstick the pads. Once enough force is applied to the drive train it pops them free. Sticking pads can be common if it was wet or cold out.

If you park a car for a longer time like more trhan a week, i always suggest putting it in gear instead of using the parking brake

do you have discs or drums? some discs also have a parking drum

Just use the parking brake or "park" on an auto trans that's what it's there for
