it replaces when a slot runs out I think. and if there's no ore to replace with it just stops. So like if you have gold ore smelting, and gold ore printing, but it smelts faster than it prints, then it'll stop eventually when there's nothing in your stash. Even if your prints top it up

yeah, it's very good, but the later kitchens are gonna be much slower than the first one for a long time, since spices for upgrading them are hard to get. So until you get access to lots of spices for those later kitchens, it's not gonna make much difference
