Summoning is mostly an active skill, the only afk thing that generates is exp which you'll claim when you move into the zone (where the pillars with the stones are)
Farming and sneaking are both constantly running/checking in the background, but for afk:
Sneaking is a bit rough early on, as you can simply fail to do anything due to your detection rate being so high
Farming is just slow early on

No need to afk in town for any of them and there are plenty off things you can be doing in previous worlds to catch up on

buy 4 gems daily from liquid shelf in alchemy, level up your yellow gift bubble, and rush a bunch of low level skills. You can easily farm ~500 gems in a day doing so
