Well ... Create is the best mod for automation but as you say it is not on 1.20 !
they are other Automation mods like Ender io and Mekanism

but they are also only for 1.19.2

a compromize for your satisfaction would probably be to play on a 1.9.2 verison of minecraft :3

But that shouldn't make a difference, does it? Or can you use Forge mods only with the specific version they specify, even if there is theoretically no issue with code compatibility? Because the Minecraft code changes from 1.20 to 1.20.1 were very minimal, so if Forge allows it you could still try using it in 1.20.

Generally should only use the mc verion mods are listed for. Saves from any weird stuff happening due to version code changes. Some times you can get away with it, sometimes you cant

If with "all in one" you mean big kitchen sink mod packs, I can't help you with that question, because I don't really like those, because I always feel overwhelmed by the choice of what to do. I started playing modded Minecraft by watching mod pack Let's Plays and mod showcases and picking out mods from there, that I was excited about to play with myself and throwing them together.
Regarding Forge or Fabric as a player it mostly comes down to for which mod loader the mods you like are available. There are a lot of mods that are available for both, but also a lot that are exclusive to one or the other, because the mod author would have to completely rewrite the mod for it to work on the other one, or just because he doesn't feel like it.
If you are searching for a mod pack to play and don't have any mods you know you want to be included, I think either one should be fine.

How to **manually** install a server - **On your own PC**

1. Check if the modpack has a server pack, if it does: use that and skip below.
2. Go to the Forge website http://files.minecraftforge.net/ and download the Installer for the forge version the pack is using.
3. Run the installer and choose Install server. Do not install to your desktop. Also do not install inside a OneDrive folder.
4. Run the server using the forge.jar. A file called eula.txt will be generated. Open it and change eula=false to eula=true
5. From the Client; Copy the mods folder, config folder, and any other folders needed for the pack to work into the server folder. If the modpack has a server pack, use this instead!
6. Run the server again.
7. Port forward your machine if needed. (Google it)

KubeJS works on servers -- I'm using it on mine to remove/modify a bunch of recipies

It's my first time using fabric, and i find it super weird that you cant do this

I looked up keybind mods on curseforge and all i could find were mods that let you add multiple functions to a single keybind, but what i want is multiple keybinds to a single function. Specifically, when on forge I use sophisticated backpacks. The keybind for the minecraft inventory is E. So obviously I would set the backpack inventory button to shift + e. On fabric, you cant do that for some ungodly reason and i cant find anything that will allow for it

Can I request mods in here? I'd love a mod for 1.20.1 where, if you throw an ender pearl into the ground, you warp into your bed. If you throw it while sneaking, you warp to spawn.

The stonecutter has a purpose of creating slabs or stairs of specific blocks that are considered stone. For example stone blocks can be turned into stone stairs or stone slabs,but cannot be turned into lets say cobblestone stairs or cobblestone slabs because "Stone" isnt "Cobblestone",or any other block.

"horse buff" doesnt do whips or such, but it makes horses much more all-terrain, which would be good for track runs. Increases step height by .1 (makes path blocks easier to scale) and allows swimming while mounted

It uses liteloader and not forge, which may also cause issues. Even the mod says that previewing an inventory only works in SP

Define automatically? Most farms utilize an observer on the grass block for that, so when the sheep eats it and the grass goes to dirt, the dispenser fires

You'd have to install it, most likely from the curseforge launcher, and then you can change your in-game control bindings to use whatever type of voice activity and volume control you want
