The pacing of when you get the bell bearing is fine, because it represents a serious invitation to grind.
And you generally want to smooth that away, so players don't torpedo their own fun
At the same time, the expense of stones per level discourages experimenting - cutting the amounts down to 1/2/3 rather than 2/4/6 would open up experimenting with more weapons more often

So, quick advice!
I would respeca and:
Get 60 vigor. This is a dramatic amount of extra hp. 40 vigor = 1450 hp, vs 60 vigor giving you 1900. And that's a lto more hp than it seems on paper because of how armor and resistances interact.
If you're not using the faith for anything other than buffs and some basic spellcasting, drop to 25 absolotuey.
Endruance can probably be dropped to 25 unless you really need the equip load, and you can still consider equiping Erdtree Favor +2 (Which is post malekieth - You have to backtrack from the Lift to get to it), which gives you 8% more equip load, 10% more stamina, and 4% more hp - which is a lot of good bonuses.
MInd is very subjective. I'd probably drop to 25 for now.
You should get 60 strength asap if that's your main stat, it makes a HUGE diffrence, and you should be gunning for 80 strength
