Lucky mons are half dust to power up so they're really nice for saving dust.

Like you won't miss the last few % but gathering good ivs is fun and powering up the best of the best is also fun.

Also you can catch like lvl35 in the wild, I had some wild catches I evolved that I've been using in raids for years without a single dust spent.

Honestly it's just about what you want to do. For me it was a lot of fun looking up what raids were coming and maybe powering up 1-2 mons per rotation, that got me a really good roster eventually. Now I got pretty much everything so I just power up fun stuff.
