That is a really REALLY good question. There are quite a few older games that are iconic but have a lot of jank to it, but there are also quite a few games that are so timeless that any remakes made about them and even a remaster could pale heavily in comparison to the original.

So, to avoid any and all bias I have for games like Golden Sun and Mega Man Zero 2 and sticking to ones I've played and beaten, I think it's gotta be Final Fantasy VII.

Everyone who like video games should play through that game and beat it at least once.
