I think Frodo and Samwise from Lord of the Rings are the best written characters I can think of from any series. The way that they interact with each other and with other members of their party or characters in the world feels very real, like they truly exist, and the experiences that Frodo endures feel so well written! The way they both talk and react makes them feel like real people, something that doesn't always happen with characters in high fantasy in my opinion.
