Can't say much for KH1, but KH2 and KH3 should have hardest difficulty "Critical Mode" with them. Depending on how you approach games, if you like a challenge, I think critical is pretty fun. 2 and 3 gives you different abilities to start with on critical which leads to faster gameplay. However if you're just doing it for the story you can just start on normal. As critical is kinda usually for those replaying the game
