Nords are tough and do best ether as tanks or Stamina based DPS
imperal are good tanks focused more on keeping you resources such as stamina up
Redgaurd are good Stamina DPS focused on weapon Abilities
breton are good at all things magic based and keeping your magica pool up.

high elf are even more magica focused than Bretons and can make a good magicka dps or healer
Wood elf are very solid choice for Stainima based damage dealing
Dark elves can be good at most anything and fill and roll
Orcs Love hitting hard and self sustain

Argonians Exist and are pretty good for learning how to heal if anything
and Khajit can also be a jack of all trades and fill any roles

a major one always has a large new area to explore, a new trial, and ether a new class or other new thing Morrowind had warden class, Summerset-Jewlery cafting, Eswyer- Necromancer and Greymoor-Vampire rework(which while came out at the same time is technically base game.) and the antiquities system.

necromancer class as a whole has the gimick of using corpses ether those of you own summons, Enemies ,or fallen allies to empower you abilities.

and touching on vampire it's something you can become if you ether find special enemies out in some zones or are bitten by another player at a vampire shrine.

The same is true for werewolf.
