No, we cannot modify email addresses. Only the end user can do that on their console.
We cannot even see email addresses. That's private information.

Yes. If you can sign in on the Wii U (like if your password was saved) and if your Wii U is modded (not using SSSL).
Click your Mii on the upper left and scroll down to change account settings
